Our masa is made the old-fashioned way. We cook white non-GMO corn with water and food-grade lime, which turns into nixtamal. We then run the nixtamal through our Molino's a using the power of two volcanic rocks. Fresh masa is created. We don't use MASECA or any corn flour for our masa's, like other places. This process takes longer, but it's the way-our Mayan ancestors did it.
